Jamaican Seafood Paella Recipe

Ingredients

  • 1 bag Rainforest Jumbo Shrimp

  • 1 bag squid

  • 2 ½ tbsp olive oil

  • 1 tsp onion powder

  • 1 tbsp minced garlic

  • 1 ½ tsp all purpose seasoning

  • ¼ tsp black pepper

  • ½ tsp paprika

  • Rice

  • 1 cup bomba or arborio rice

  • 1 ½ tbsp minced garlic

  • 2 large pinches of saffron

  • 2 tsp paprika

  • ¼ tsp red pepper flakes

  • ½ tsp oregano

  • 1 bay leaf

  • 1/2 cup fire roasted diced tomatoes

  • 3 cups chicken stock

  • Salt and freshly cracked black pepper

  • Olive oil for sautéing

  • Other ingredients

  • 1 cup diced onion

  • 3 tbsp garlic

  • Chopped parsley

  • Fresh lemon wedges

  • Olive oil

Method

Marinate shrimp and squid in a bowl

Heat olive oil in a large shallow pan on medium-high heat

Sauté the onion for 2.5 mins

Add the rice and sauté for 1 min

Add the tomatoes, garlic, and spices and sauté for 2.5 mins

In the meantime, preheat grill to 500 F

Add the stock, mix well then leave to simmer uncovered on medium heat for 17mins

Add mussels to the rice after the rice has been cooking for 12 mins and let them steam for the remaining 5 mins

Grill the shrimp and squid for 2 mins each side

Top the paella with the shrimp, squid, parsley, and lemon to serve.
