  • Pot

  • Stove

Ingredients

  • 1/4 cup coconut milk

  • 5 okra

  • 1 carrot

  • 1 potato

  • 1/4 lb pumpkin

  • 1 cucumber (diced)

  • 1 tsp black pepper

  • 3 tsp curry powder

  • 1 tsp salt

  • 1 peg garlic

  • 1 onion

  • 1 stalk escallion

  • 12 scotch bonnet pepper

  • 1 tbsp oil

Method

Cut up pumpkin, okra, potato, cucumber and carrot.

Season with salt, black pepper, 2 tsp curry

Cut up onion, escallion, scotch bonnet.

Pre-heat pot and add oil drop in garlic and 1 tsp curry.

Allow it to fry for 1 minute

Add cut-up seasonings and stir fry for 30 seconds.

Add cut-up vegetables and stir fry for another 30 seconds.

Add a cup of water mixed with coconut milk powder or 3/4 cup water and 1/4 cup coconut milk.

Turn down fire to low heat and allow to simmer for 10 mins.

Add salt to taste or optionally your favorite all purpose seasoning
