Roast Lamb Chops

Our readers certainly enjoyed the Roast Jerk Turkey Breast with Chutney Glaze recipe by homemaker par excellence Allison Porter Smalling, so we decided add this Roast Lamb Chops recipe. Enjoy!

Ingredients:
Pam Cooking Spray
1/4 cup olive oil
Pinch of sugar
9 racks of lamb chops
1 grated zest of lime
1/2 cup lemon juice
2 1/4 cups rosemary leaves (chopped)
2 tbsp complete seasoning
1 tbsp Mountain Blue Farms Coffee Rub
Pinch of garlic salt

Method:

In a medium bowl, mix together the oil, complete seasoning, salt, coffee rub, lime zest, rosemary leaves and sugar. Use this mixture and season the lamb chops on both sides, cover and refrigerate overnight.

Use Pam Spray and spray grill lightly, while hot. Place the lamb chops on the grill on one side for about 3 minutes and sear until golden brown. Flip lamp chops and repeat process for the same time.

Take lamb chops off the grill and place in a flat roasting pan. Pour 1/4 cup of beef stock and _ cup red wine. Cover and place in oven set at about 325 degrees while covered with foil for about 15 minutes.

Remove foil and let lamb chops remain in oven for another 5 minutes.

Serve immediately with mint jelly at the side.
