Hailed from New England, the best bite of this poached lobster roll is the first bite, when the bun is still warm and toasty and the lobster meat is warmed and buttery.

Ingredients

2 lbs lobster meat
Hotdog rolls or hoagies
2 tbsp passion fruit
2 tbsp scotch bonnet aioli
2 tbsp thyme
2 cups white wine
1 head garlic (minced)
1 white onion (minced)
0.25tsp black pepper (1/4 tsp)
1 tsp salt
0.25tsp paprika (1/4 tsp)
2 tbsp butter
Chives (to garnish)

Directions

Method

Melt butter, being careful and not to brown.
Mark as complete

Add garlic and onion and saute
Add powered seasoning, thyme, salt and pepper.
Mark as complete

Deglaze with white wine and then add lobster meat, mixing frequently until cooked all the way through.
Mark as complete

Toast and butter bread rolls.
Mark as complete

Spread on scotch bonnet aioli. Add lobster meat. Top with passion fruit and chives.
