This colorful callaloo quinoa salad topped off with a spicy citrus dressing is full of healthy ingredients and tastes incredible!

Ingredients

1 cup chicken or vegetable broth
1 cup quinoa (rinsed and drained)
1 tsp sea salt
6 cups chopped callaloo
1 lb cherry tomatoes (halved)
3/4 cup spicy citrus dressing
1 or 2 jalapenos (stemmed, seeded and chopped)
1/2 cucumber (halved lengthwise and sliced)
1/2 small red onion (very thinly sliced)
1 cup celery

  • 1 cup chicken or vegetable broth

  • 1 cup quinoa (rinsed and drained)

  • 1 tsp sea salt

  • 6 cups chopped callaloo

  • 1 lb cherry tomatoes (halved)

  • 3/4 cup spicy citrus dressing

  • 1 or 2 jalapenos (stemmed, seeded and chopped)

  • 1/2 cucumber (halved lengthwise and sliced)

  • 1/2 small red onion (very thinly sliced)

  • 1 cup celery

Instructions

In a medium pot, bring 1 cup water, broth, quinoa, oil and salt just to a boil. Reduce heat to medium-low, cover and simmer until liquid is absorbed and quinoa is tender about 20 minutes. Uncover, fluff with a fork, transfer to a large plate and set aside to let cool.

In a large bowl, toss together callaloo, tomatoes, and 1/4 cup dressing, then transfer to a larger platter. In the same bowl, gently toss together reserved quinoa, jalapenos, cucumber, onion and remaining 1/2 cup dressing.

Spoon quinoa mixture over salad, top with celery and serve.
