Equipment

  • Cast Iron Pan

Ingredients

  • 4 Copperwood Pork chops

  • 4 tbsp oil

  • Dry Brine

  • 1 tbsp salt

  • 1 tbsp sugar

  • 1 tbsp onion powder

  • 1 tsp smoked paprika

  • 2 tsp ground allspice

  • 1 tsp dried scallion

  • 1/2 tsp black pepper

  • 1/4 tsp cumin

  • 1/2 tsp sumac (optional)

  • For The Sauce

  • 1/4 cup chicken or beef stock

  • 1/4 cup mustard

  • 1/4 cup honey

  • 3-4 sprigs thyme

Directions

Wash and pat dry the pork chops.

Mix all the dry brine ingredients together.

Season the pork chops liberally with the rub and place in a refrigerator uncovered overnight or for at least 4 hours

Heat the oil and sear the chops in a non-stick or cast iron pan for 2-3 minutes per side, remove when it hits an internal temp of 145 and set aside.

Add stock, honey and mustard to the pan drippings and allow that to reduce to a thick rich sauce.

Place the chops back in the pan with thyme, reduce the heat to very low and cover allowing it to simmer for 5 minutes.

Remove the pork chops from the heat and allow it to rest for 10-15 minutes before eating.
