1 lb ground chicken
1/2 cup chopped onion
1 tbsp chopped green onion
1-2 tbsp chilli powder
1/4 diced green bell pepper
1/2 cup diced fresh tomato
1 cup cooked kidney beans
1/2 cup tomato sauce
3 tbsp olive oil
1 1/2 cups of water or stock
salt and black pepper to taste
Heat up a skillet or port and add olive oil.
Gently fry onion, green onion, tomatoes and green bell pepper for 2 minutes at medium heat.
Add tomato sauce
Add chilli powder and mix gently
Mix in ground chicken and stir cook for 2 minutes.
Add water or stock and salt and pepper.
let it cook for 5 minutes at medium heat.
Remove and gently pour chilli into a oven-proof baking casserole.
1 cup cornbread mix
2 tbsp vegetable oil
1/2 cup milk
Mix together and pour cornbread batter evenly over chilli.
Bake in a heated oven at 350 degrees F for 20 minutes or until top is golden brown.
Remove and let it rest for 5 minutes before serving.
