Gluten-Free Sweet Potato Cinnamon Pancakes Recipe

  • Medium bowl

  • Small bowl

  • Whisk

  • Large skillet / Griddle

  • Spatula

Ingredients

  • 1 cup Jamaica Harvest Sweet Potato Flour

  • 2 tbsp sugar

  • 1/2 tsp baking soda

  • 2 tsp baking powder

  • 1 tbsp cinnamon

  • 1 tsp salt

  • 2 tsp vanilla extract

  • 1/4 tsp nutmeg (grated)

  • 1 cup milk

  • 3 tbsp melted butter/vegetable oil

  • 2 large eggs

  • 1 tbsp vegetable oil for pan

Instructions

In a small bowl, mix together flour, sugar, baking powder, baking soda, nutmeg, cinnamon and salt; set aside.

In a medium bowl, whisk together milk, butter (or oil), vanilla and eggs.

Add dry ingredients to the milk mixture; whisk until moistened.

Heat a large skillet or griddle over medium heat. Moisten with oil. For each pancake, spoon 1 tbsp batter on skillet.

Cook for 1 to 2 minutes.

Flip carefully with a thin spatula, and cook until browned. Serve.
