2 1/2 cups watermelon (diced and seeded)
1 jalapeño pepper (seeded and minced)
1 cucumber (seeded and diced)
1/3 cup cilantro (chopped)
1/4 cup lime juice
1/4 cup red onion (minced)
4 basil leaves (finely chopped)
2 tbsp sugar
Fresh ground pepper
Salt for taste
Add the watermelon, cucumber, onion, basil and jalapeño pepper in a bowl.
Add the lime juice, sugar and black pepper to the bowl and toss gently.
Season with salt. Place in refrigerator.
Note: Can be made a day ahead and stored in the refrigerator. Add more jalapeños to increase the heat of the salsa.
