Ingredients

2 whole 3 lb chickens
3 tbsp green seasoning
2 tbsp Maggie chicken seasoning
2 tbsp All purpose seasoning
2 tbsp soy sauce
2 tbsp sweet chilli sauce
2 tbsp oyster sauce

1 red stripe sorrel beer
1 tbsp brown sugar
1/2 tbsp fresh grated ginger
1/4 cup freshly squeezed orange juice or pineapple juice
6 pimento berries

Red Stripe Sorrel Glazed Roast Chicken Recipe

Ingredients

  • 2 whole 3 lb chickens

  • 3 tbsp green seasoning

  • 2 tbsp Maggie chicken seasoning

  • 2 tbsp All purpose seasoning

  • 2 tbsp soy sauce

  • 2 tbsp sweet chili sauce

  • 2 tbsp oyster sauce

  • Sauce ingredients

  • 1 red stripe sorrel beer

  • 1 tbsp brown sugar

  • 1/2 tbsp fresh grated ginger

  • 1/4 cup freshly squeezed orange juice or pineapple juice

  • 6 pimento berries

Method

Cut both chickens in spatcheback form

Wash and clean chicken

Pat chickens dry with paper towel

Season chickens well and be sure to get seasonings underneath the chicken skins

Marinate chicken overnight or for at least 6 hrs

Preheat oven to 360 degrees Fahrenheit for at least 10 mins

Add chickens to a baking rack ( be sure a container is underneath to catch the juices )

Roast for 40 mins and be sure to baste chicken every 20 mins during roasting process

Combine all sauce ingredients in a small sauce pan on stove top and simmer until it has thickened a bit

Adjust oven temp to 400 degrees and set timer for another 30 minutes

Glaze your chicken with sorrel sauce every ten minutes for the remaining 30 minutes roast time

Notes

You may turn your oven on broil to let chickens caramelize on the outside for another 5-8 mins be sure to watch it so they don’t burn.
