Rainforest Seafoods Steamed Fish & Crackers

A quick and easy Jamaican Steamed Fish Recipe with Okras and Veggies by Rainforest Seafoods. Perfect for lunch or dinner, and can be served with your favourite side!

Ingredients

3 lbs whole Rainforest Seafoods Red Snappers
8 National Water Crackers
2 cups fish stock
1 cup potatoes (diced)
1 cup pumpkin (diced)
4 okras (sliced)
1 cup tomatoes (diced)
1 tbsp black pepper
1 onion (chopped)
2 cloves garlic (chopped)
2 stalks escallion (chopped)
1 sprig thyme
Scotch Bonnet Pepper (chopped)

Directions

Pour fish stock in a large skillet & bring to a boil. Add potatoes, pumpkin and okras. Cover and let simmer for 10 mins.

Slit Rainforest Seafoods Red Snappers on either side. Stuff fish with half the vegetables & seasonings (tomato, black pepper, scotch bonnet, onion, garlic & escallion).

Sprinkle with remaining black pepper. Place fish into boiling fish stock. Add remaining garlic, tomato, onion, escallion, scotch bonnet, thyme & a whole scotch bonnet pepper.

Spoon stock over fish. Cover & steam over low flame for 10 minutes.

Serve fish oon platters, add National Water Crackers & pour on fish stock.
