Lillan Barbecue Pigtail

Try out this tasty Lillan’s Barbecue Pigtail recipe for all you Pork lovers.

Ingredients
4 tbs pigtail
5 tbsp green seasoning
5 bay leaves
5 cloves garlic (peeled and chopped)
2 cups barbeque sauce
Water (for boiling)

Green Seasoning
4 stalks scallions
1 bunch thyme (remove very thick stems)
1 bunch cilantro
1 bunch parsley
12 cloves garlic (peeled)
1 large onion (peeled and chopped)

Optional
1 stalk celery
6 pimento peppers (stemmed)
1/2 red sweet pepper (seeded)
1/2 green sweet pepper (seeded)
Scotch bonnet

Preparation
Boil in two stages – first, for a minimum of 30 minutes.
Drain and wash under cold water.
Boiled a second time for 30 minutes, adding the bay leaf, green seasoning and chopped garlic.
Twenty minutes in , time to fire up your grill.
Drain and set aside. Pigtail is now ready for grilling.
Making barbeque sauce (optional, can use prepackage).
Dip the pigtail in the barbecue sauce before putting it on the grill.
Place over the grill and let cook until it achieves a golden-brown colour.
Dip again in the barbeque sauce and return to grill for another 3 minutes.
Remove and cut the pigtail at the joints (if you prefer) and serve with pepper and barbecue sauce.

Green Seasoning
Wash, drain, and roughly chop herbs, onion, sweet pepper, onion, and any other ingredients you are using.
Place all ingredients in a blender and food processor and puree until fine. Water is not required in a food processor, but add just enough water to blend in the blender. Scrape down sides and pulse again.
