Jamaican Sweet Potato Easter Bun Recipe

Ingredients

  • 1 cup sugar

  • 2 tbsp molasses

  • 2 tsp mixed spice

  • 1 bottle stout

  • 2 tbsp margarine

  • 1 medium egg

  • 2 cups flour

  • 1 1/2 cups sweet potato (boiled and crushed)

  • 2 tsp baking powder

  • 1 1/2 cup crystallised) otaheite apples/guavas/sweet potato (mixed peel)

Method

Melt margarine and beat eggs

Dissolve sugar, molasses and spice in stout. Add margarine and beaten egg.

In a bowl, combine flour and baking powder.

Gradually add liquid mixture to dry ingredients, beating well.

Add 1 cup mixed peel, reserved 1/2 cup for topping and mix well.

Bake in a greased loaf pan at 160 degrees C for about 45-60 minutes, or until a skewer inserted comes out clean.

Glaze with honey and melted margarine.
