Jamaican Snapper in Brown-Stew

Ingredients

1 whole snapper
2 oz flour
1 plummie tomato
3 oz carrot (julienned)
2 oz chocho / christophene (cut in thin strips)
1 oz sweet pepper (cut in thin strips)
3 crackers
2 okras (sliced)
3 tbsp ketchup
pinch of caramel
1/2 cup coconut oil
1/2 small onion (cut in the strips)
scotch bonnet pepper (to taste)
salt & pepper

Directions

Heat oil in a skillet. Dust fish in flour. Fry snapper over medium heat for 3 mins either side.

Drain oil from skillet. Saute vegetables, adding ketchup. Simmer one minute.

Add snapper, crackers & okras and let simmer for 10 mins.

Serve with starch or steamed vegetables.

Serve: 1
