Jamaican Shrimp in Spicy Coconut Sauce Recipe

Equipment

  • Large frying pan

Ingredients

  • 3 tbsp KENDEL Vegetable Oil

  • 1/2 cup KENDEL Coconut Milk

  • 2 tbsp KENDEL Scotch Bonnet Pepper Sauce

  • 1 tsp chopped garlic

  • 1 medium onion (chopped)

  • 1 medium sweet pepper (chopped)

  • 1 stalk escallion

  • 2 tbsp low sodium soy sauce

  • 1/4 cup low sodium chicken broth or water

  • 3 tbsp curry powder

  • 1 lb medium shrimp (cooked)

Directions

Heat the oil in a large frying pan over low heat, add curry to oil and allow to burn.

Add garlic and cook until fragrant.

Stir in KENDEL Scotch Bonnet pepper sauce, chicken broth or water, sweet pepper, onion, escallion and soy sauce.

Bring to a boil, reduce the heat and simmer for 5 minutes,

Stir in the KENDEL Coconut Mlik and return to simmer without boiling.

Add cooked shrimp and heat through.

Garnish and serve with KENDEL Jasmine rice.
