Coconut drops, is the flesh of the coconut, cut into small pieces cooked in sugar water, until the sugar is caramelized, a piece of ginger is added for flavour.
4 cups water
2 cups dry coconut (diced)
1 1/2 cups dark sugar
1 tbsp ginger
Put water to boil, add diced coconut and boil for about 40 minutes.
Add the sugar and ginger and continue boiling until the mixture becomes syrupy (about 30-35 minutes).
Use a spoon to scoop out mixture to create 1-1/4-inch wide mounds on the greased paper or on a green banana leaf.
Allow to cool until the drops have fully set.
