Christmas Delight Hamlette

Wondering what to prepare for breakfast? Try this easy to prepare Christmas Delight Hamlette by Jamaican Chef Dave Paul.

Ingredients
4-6 eggs (beaten)
1 tsp butter
1/4 cup ripe plantain (diced)
1/4 cup bell red/green pepper (diced)
1/4 cup onion (diced)
1/4 cup ham (diced)
1/4 cup cheese (shredded)
1 tsp salt
1 tsp black pepper

Method
1. In a medium bowl, add salt and pepper to beaten eggs. melt butter in non-stick frying pan to low heat.
2. Pour the eggs into the pan, tilt the pan slightly from one side to another to allow the eggs to swirl and cover the surface of the pan completely. Cook for about 20 seconds then scrape a line through the middle with a spatula.
3. Tilt the pan again and allow it to fill back up with the runny egg. Repeat this once twice more until the egg has just set.
4. Add cheese, plantain, sweet pepper, ham, onion and allow to cook for 20-30 seconds, fold in half gently with a spatula.
5. Serve warm.

Cook time: 5 mins
