Chicken Fried Oatmeal Recipe

Ingredients

  • 2 cup quaker old fashioned oatmeal

  • 1 cup cold water

  • 1 skinless boneless chicken breast

  • ½ teaspoon (to season chicken)

  • ¼ teaspoon black pepper(to season chicken)

  • ½ teaspoon smoked paprika(to season chicken)

  • 1 teaspoon onion powder(to season chicken)

  • 1 teaspoon (to season chicken)

  • 3-4 tablespoon sesame oil

  • ½ cup onion sliced

  • 1 cup broccoli florettes

  • ¼ cup radish slices (or carrots)

  • 1 garlic clove

  • 1 tablespoon shredded ginger

  • 1 ½ tablespoon dark mushroom soy

  • 1 tablespoon honey

  • ¼ teaspoon vinegar

Directions

Slice the chicken into strips and season with salt, black pepper, onion powder, paprika, and oil

Soak the old-fashioned oats in cold water for 30 seconds, just enough to soften the outer coating

Strain and add the wet oats to a hot pan, stir and cover on medium-low heat and allow the oats to steam, occasionally fluff to separate the grains so it doesn’t clump up

After about 8 minutes the oats should be 90 percent cooked but firm, not mushy

If they are getting too crispy in the pan, reduce the heat and add a tablespoon of water and cover to steam. Repeat as necessary to get the correct texture

Once the oats are cooked remove from the heat and set aside

Slice the onions and radish, shred the ginger and garlic and prep the broccoli

In a small bowl mix the soy sauce, honey and vinegar

Add the sesame oil to a hot pan and saute the chicken until golden
10
Add all the veggies and keep stirring until the onions begin to soften

Add the cooked oats and the soy sauce mix
