Roasted Red Pepper Tuna Macaroni Salad Recipe

  • 8 oz macaroni elbows

  • 2 red peppers

  • 2 cans chunk light tuna in water

  • 1 ½ cups mayo

  • 1 tablespoon fresh chopped sage

  • 1 tablespoon shredded onion

  • ¼ cup shredded green sweet pepper

  • ¼ cup green sweet peas

  • ¼ cup sweet corn

  • ½ teaspoon salt

  • 1 ½ teaspoon honey

  • ¼ teaspoon black pepper

  • 1 teaspoon onion powder

Directions

Place red peppers directly on the flames and allow them to char totally

Once the skin is black and charred, place in a container and cover, allow it to steam for 5 minutes

Peel away the charred skin, remove the seeds and dice the peppers

Cook 8 oz macaroni in a pot of salted water according to the packages directions

Strain, wash with cold water and set aside to completely cool

Cut and strain the tuna and mix with the cold macaroni elbows

In another bowl mix together mayonnaise, sage, salt, onion powder, black pepper, roasted red pepper and honey

Add the corn, peas, and the elbows and tuna mixture

Mix thoroughly, serve immediately or place in the refrigerator for at least an hour (overnight best) for the flavors to develop
