Shrimp & Yam Rundown

The key ingredient of Shrimp & Yam Rundown is coconut milk that has been thoroughly cooked and thickened or, “run down” to a creamy, custard consistency. Try this easy to prepare dish by Rainforest Seafoods.

Ingredients

1 pack Rainforest Seafoods medium peeled Shrimp.
2 cloves Garlic minced
1 tbs Butter
1 1/2 cup Coconut Milk
2 tsp Seafood Spice
1 Sprig Thyme
6 Pimento grains
1 stark Scallion sliced
1 Hot Pepper minced
1 Small Onion diced
1 Small sweet Peppper diced
1 Small Plum Tomato diced
4 oz. diced and cooked Yellow Yam

Method

Season the shrimp with the seafood spice and let it sit for a minimum of 15 minute.

Place the butter in a sauté pan on medium flame, add all the ingredients except the shrimp and coconut milk.

Sauté for 2 minutes add the coconut milk and allow it to reduce until it starts forming a custard.

Place your shrimp in, lower your flame and continue cooking for 6 more minutes.

Remove and serve.

Serve: 2
