A Jamaican Christmas celebration is not complete without traditional Jamaican Christmas Fruit cake. It has been a favored gift amongst Jamaicans during the Christmas season.

Ingredients

Adjust Servings
6ounces flour
8ounces Gold seal margarine or butter
8ounces sugar
4 eggs
1lb raisins
1tsp cinnamon
0.5tsp mixed spice
0.5tsp salt
4ounces mixed peel
4ounces cherries
0.5lb prunes (chopped)
1 cup wine / brandy
1 tsp baking powder
1tsp vanilla
1 finely gratedrind of lime/lemon
2tbsp browning (or burnt brown sugar)

Directions

1.

Cream butter, sugar and browning until soft and fluffy.
Mark as complete
2.

Sieve all dry ingredients together
Mark as complete
3.

Beat eggs, wine/brandy together.
Mark as complete
4.

Add egg mixture to creamed butter and sugar.
Mark as complete
5.

Add fruits.
Mark as complete
6.

Add flour and fold in. Do not over-beat when mixing.
Mark as complete
7.

Bake at 350 degrees F for 1 hr 30 mins.
Mark as complete
