Equipment

  • Sauce pan

  • Oven

Ingredients

  • 1 whole Hamilton’s Smokehouse Leg Ham or Picnic Ham

  • 2 tins sliced pineapples

  • 2 cups brown sugar

  • 2 tbsp ginger

  • 2 tbsp cloves

  • 1 pack baking cherries

Instructions

1
Fully thaw ham in the refrigerator.
2
Completely wrap in foil and place in oven; allow to bake for 20 minutes per pound. Once thermometer inserted reads 145 degrees F or higher, remove from oven and remove the skin and place aside on baking tray.
3
Using a sharp knife, score the ham along the surface of the ham.
4
Place cloves all over the entire surface of ham.
5

Prepare Pineapple Ginger Sauce

Combine 1 cup of brown sugar, a handful of cloves, ginger and the entire contents of the tins of sliced pineapples, juice included, into a sauce pan.
6
Allow to simmer and reduce oven medium heat for roughly 20-30 minutes until thick and syrupy.
7
Baste ham with Pineapple Ginger sauce
8
Sprinkle and pack on brown sugar on the entire surface of the ham and return to oven at 375 degrees F until the sugar has caramelized, roughly 30-45 minutes. This allows ham magic to happen.
9
Remove the ham and allow to cool for 20 minutes.
10
Using a toothpick, arrange and hold in place the pineapple slices all over the surface of ham; for that extra special touch, add a cherry in the center of each slice of pineapple, creating that daisy effect well all know and love.
11
Brush the ham with the remaining sauce.
12
Place ham for the final time in the oven for 15 minutes.
13
Once done, allow to cool for 20 minutes.

Notes

Cook time dependent on the size ham.
