Ingredients

1/2 cup LASCO milk (mixed)
2 Eggs (beaten)
3/4 cup cheddar cheese
1 tsp dried oregano
5 cans LASCO Hot and Spicy Mackerel in Tomato Sauce 155g
1 small can tomato paste
1 cup water
3 tbsps LASCO Vegetable Oil
1 onion (finely chopped)
5 cloves garlic (minced)
2 large tomatoes (cut in sections and roasted)
1/2 scotch bonnet pepper
1 tsp LASCO garlic seasoning
1 tsp LASCO black pepper and salt
1 pack lasagna (cooked, drained and coated in oil)

  • 5 cans LASCO Hot and Spicy Mackerel in Tomato Sauce 155g

  • 1 small can tomato paste

  • 1 cup water

  • 3 tbsps LASCO Vegetable Oil

  • 1 onion (finely chopped)

  • 5 cloves garlic (minced)

  • 2 large tomatoes (cut in sections and roasted)

  • 1/2 scotch bonnet pepper

  • 1 tsp LASCO garlic seasoning

  • 1 tsp LASCO black pepper and salt

  • 1 pack lasagna (cooked, drained and coated in oil)

Method

Preheat oven to 350 degrees F. Mix together milk, eggs, cheese and oregano, ensuring eggs are incorporated fully into the mixture. Set aside.

Open cans of mackerel and separate them from tomato sauce. Mix tomato paste with mackerel sauce then add a little water to thin out slightly.

Heat oil in a large saucepan. Saute onion and garlic then add roasted tomatoes and scotch bonnet, and continue sauteing.

Pour in tomato paste mixture and season with garlic powder, pepper and salt. Let ingredients simmer for 15-20 minutes over low heat until sauce is thick and well combined.

In a medium-sized greased pan, lay the lasagna down flat side by side. Break mackerel into chunks then lay half of it over lasagna.

Spoon a generous amount of the sauce mixture over the mackerel then pour in half of the cheese mixture. Repeat the layering process until all ingredients are used up.

Place in oven for 45 minutes to an hour or until top appears brown and bubbly.
