Jamaican Ham with Pineapple and Mustard Glaze

1 Caribbean Passion Bone-in Leg Ham
2 ripe pineapple juice
1 cup mustard
1/4 cup sugar

Preheat oven to 200 degrees C.

Slice the pineapples into rings, removing cores then set aside.

To prepare glaze:
– Combine pineapple juice, mustard and sugar in saucepan over medium heat.
– Bring to a slow and rolling simmer.

Let reduce by half stirring occasionally. Remove from saucepan and let cool.

Add pineapple rings to saucepan and cook, turning once until golden.

Place ham in large roasting pan, brush with glaze and place pineapple rings to top.

Cook according to instructions on package, basting ham occasionally.
