The Best Dressed Chicken Paella Rice Bowl

Ingredients:
2 The Best Dressed Chicken Thighs (cubed)
1/4 cup olive oil (divided)
1 tablespoon paprika
1/4 cup orange juice
1 lemon (juice + zest)
2 cups rice
1 onion (chopped)
1 clove garlic
2 1/2 cups chicken stock
1/8 teaspoon saffron
1 sweet pepper (chopped)
1/4 teaspoon salt
1/4 cup parsley (chopped)

Method:
In a bowl, combine The Best Dressed Chicken thighs, olive oil, paprika, orange juice, lemon juice and lemon zest. Refrigerate and marinate for at least 1 hour.
Heat olive oil in pan over medium heat. Add onion and garlic. Stir for a minute. Add rice and mix until rice is coated in oil. Add chicken stock and saffron. Bring to a boil, cover and reduce to low heat. Simmer for 25-30 minutes until rice is fully cooked.
In another pan with 1 tablespoon olive oil, add chicken, salt and sweet pepper and cook for 5 minutes. Add chicken, sausage and sweet pepper mixture into rice. Stir to combine. Sprinkle parsley on top of the rice and serve.
