8 oz Jumbo Shrimp (about 7-8 Shrimp)
2 oz Guava Jelly
1 tsp Curry Powder
3 oz Escallion
3 oz Onion
1 sprig Thyme for garnish
1/2 tsp Cumin
1 clove Garlin
6 oz Irish Potato
1 sprig Parley
1 tsp Black and White Sesame Seeds
4 oz Olive Oil
Fresh Vegetables (We suggest String Beans, Carrots, Broccoli, Cauliflower)
Salt and Pepper for taste
For Shrimp: Rinse shrimp and remove shell. Season shrimp with salt, pepper, onion, escallion, garlic and cumin powder.
For Sauce: In a sauce pan add olive oil, curry powder, onion, escallion and guava jelly and saute for 1 min. Add shrimp and cook for another 4 mins. Remove and set aside.
For Potato: Peel potato and blanch. REmove and season with parsley, sesame seeds, olive oil, salt and pepper. Shape potato into ovals. Place on a baking sheet and bake for 10 mins.
For Vegetables: Blanch vegetables, season with salt and pepper and olive oil.
