Ingredients

  • 1 1/2 cups ground graham crackers

  • 1/3 cup sugar

  • 1/2 tsp cinnamon

  • 1 tbsp melted butter

  • Pie Filling

  • 2 cups boiled & mashed sweet potato (2 medium sized potatoes)

  • 3/4 cup brown sugar

  • 1 1/4 tsp coriander

  • 1/2 tsp freshly grated nutmeg

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup unsalted butter

  • 1 1/4 cup evaporated milk

  • 3 large eggs

  • 1 1/2 tsp vanilla extract

Instructions

For Pie Crust

Blend crackers, sugar, melted butter and cinnamon and press down into pie container with a flat bottom cup

Preheat the oven to 375 degree F

Boiled sweet potato until tender for about 20 minutes; its bet to cut the potato into smaller pieces.

Drain the water from the potato and use a potato masher to crush the potato similar to making mashed potatoes.

Once crushed and potatoes are still hot add in the butter, brown sugar, salt, spices (cinnamon, coriander and nutmeg), add the evaporated milk gradually while an immersion blender.

Add in the eggs and vanilla extract.

Mix with the immersion blender until extremely smooth

Pour into the pie crust

Place in the oven at 375 degrees F for 10 minutes and then turn the temperature down to 325 degrees F for 45 minutes.

To test if the pie is done give it a light shake or jiggle to see if the center is wiggly if so leave fir another 5-10 minutes until completely firm.

Can be served once it has fully cooled, it will last up to 5 days wrapped and covered in the refrigerator.

Notes

NB: A 9" graham cracker crust from the supermarket will work just as well. If the pie filling starts to get dark it has been in the oven for too long.
