Ingredients
- 1 day old bread
- 2 Tablespoons Butter/Margarine
- 1 ½ Cups Pineapple chunks or crushed Pineapple (drained)
- 1 1/2 Cups Sugar
- 3 Eggs, slightly beaten
- 2 Cups Milk
- ½ Cup Coconut Milk
- 1 Teaspoon Benjamins Cinnamon Extract
- 1 Teaspoon Benjamins Vanilla
- 1 Teaspoon Benjamins Nutmeg Extract
- ¼ cup White Rum (Optional)
Method
Preheat oven to 350 F/180 C.
Grease round cake pan generously and set aside.
Cut bread into small pieces and place in large mixing bowl.
Heat milk, stir in butter, sugar, Benjamins Vanilla, Cinnamon and Nutmeg Extracts.
Remove mixture from heat and allow to cool.
Then stir in eggs.
Pour milk mixture, pineapple chunks or crushed Pineapple and rum over bread.
Mix well and allow to sit until bread mixture is well saturated.
Pour mixture into cake pan and bake for 45 – 60 minutes, or until pudding is firm.
