Ingredients
GINGER JERK BARBECUE FISH FILLET
- 2lbs Fish fillet
- 1 ½ teaspoons Salt 2 teaspoons Fish Seasoning
MARINADE
- 1 cup BENJAMINS GINGER JERK BARBECUE Sauce
- 3 tbsp BENOLA Extra Virgin Olive Oil
- 1 teaspoon Benjamins Ginger Extract
- ½ teaspoon Benjamins Spicy Jerk Seasoning (optional)
Method
Wash fish and season with salt and fish seasoning.
Mix Benjamins Ginger Jerk Barbecue Sauce, Benola Extra Virgin Olive Oil, Benjamins Ginger Extract, Spicy Jerk Seasoning and pour over fish ensuring all the fish is saturated with marinade, then cover. Refrigerate at least 30 – 45 minutes.
PREPARATION
Place fish fillets in foil and wrap.
Place all wrapped fillets on a baking or grilling tray adding a cup to two cups of water and bake in the oven for approximately 15 – 20 minutes.
Purpose of water is to ensure the foil wrapper does not stick to the baking tray and to prevent excessive drying out of the fish.
Using an instant read thermometer test the fish to know if it is properly cooked. Internal temperature should be 145 degrees F.
If not use a fork or a skewer and test for tenderness.
Baste with marinade as desired and serve.
