1 can LASCO salt fish (drained)
1 tbsp LASCO jerk seasoning
1 tsp LASCO fish seasoning
1 tbsp onion (fine diced)
1 tsp sweet pepper (fine diced)
1/2 tsp chopped sweet basil or rosemary (chopped)
1/4 cup grated cheddar cheese
1 flour tortilla
Saute fish with LASCO jerk and fish seasoning, onion, sweet pepper and chopped herbs.
Place tortilla in a skillet and allow to slightly toast on one side for about 30 seconds
Flip tortilla over. Place sauteed salt fish in one half of tortilla. Sprinkle cheese over mix and fold in half.
Remove from pan allow the heat to melt the cheese, then cut into 4 equal slices.
Enjoy with a dollop of sour cream
Makes 1 quesadilla.
