Chicken tinga (known as tinga de pollo in Spanish) is a Mexican dish made with shredded chicken in a sauce made from tomatoes, chipotle, chillis in adobo and sliced onions. It is often served on a tostada and accompanied by a layer of refried beans. It can be topped with avocado slices, crumbled cheese, Mexican crema, and salsa.

This recipe by Chef Samantha George is an adaption of the traditional Ching Tinga, the chicken was not precooked as often done but instead apply the seasoning to raw thinly sliced chicken and add tomato sauce during the process.

Equipment

  • Large bowl

  • Ceramic frying pan

Ingredients

  • 4 pieces Chicken thigh (boneless)

  • 2 tbsp Taco seasoning

  • 2 tsp Adobo sazon

  • 4 cloves garlic (minced)

  • 1/2 tsp green scotch bonnet pepper (diced)

  • 1/4 cup beer

  • 1/2 stick butter (unsalted)

  • Olive oil

  • 1 large onion (thinly sliced)

  • 1 tsp flour

  • 1/4 cup chicken stock

  • 1/2 tsp salt

Method

Thinly slice chicken thigh almost resembling matchsticks.

In a large bowl, add all seasonings and beer to the chicken. Massage to evenly distribute spices, cover and refrigerate for 1 hour to overnight for the flavours to penetrate the chicken meat.

Heat cast iron or ceramic frying pan to medium heat.

Add butter and cook until medium brown. Pour in olive oil. Add onions and sautee until soft, then add flour and stir.

Add seasoned chicken and stir to coat all pieces in melted butter. Pour in beer, stir and cover for chicken to simmer for about 4 minutes.

Taste and season if necessary with salt or more taco seasoning to taste.

Serve with tortillas to make tacos. The sauce can be made alone and used with precooked meat like rotisserie chicken or cooked lamb. Enjoy!
