Chocolate Cupcakes Recipe

Makes 12 cupcakes

Ingredients

1 3/4 cups unbleached all-purpose flour
1 1/2 cups granulated sugar
1/4 cup plus 2 tbsp. unsweetened cocoa powder
1 1/2 tsp baking soda
3/4 tsp table salt
1 1/2 cups water
2 large egg
1/3 cup vegetable oil
1 1/2 tsp pure vanilla extract
1 1/2 tsp white vinegar
1 cup chocolate chips

Directions

Preheat the oven to 350 degrees F

Butter and flour a 12 cup muffin pan. Mix the flour, sugar, cocoa, baking soda, and salt on speed 2.

In a small bowl, stir together the water, eggs, vegetable oil, vanilla, and vinegar with a fork. With mixer running on speed 4, slowly add the liquids to the dry ingredients. Mix until just combined. Add the chocolate chips and incorporate using the fold button.

Divide evenly among prepared muffin cups, so that each is filled 3/4 of the way. bake the cupcakes in the middle of the oven for 25 to 30 minutes, or until puffed and spring back to the touch. let muffins cool in pan on cooking rack of 5 t0 10 minutes. Unmold and continue to cool on rack. Once completely cooled, frost with Chocolate Frosting.
