Christmas Ham and Egg Breakfast Salad

What would the festive season be without ham? This recipe includes a flavour-filled healthy egg breakfast salad, courtesy of The Best Dressed Chicken.

Ingredients

⅓ cup fresh cilantro leaves
¼ cup olive oil
1 red onion (chopped)
1 cup orange juice
⅛ tsp orange zest
2 tbsp granulated sugar
Pinch of black pepper
Pinch of salt
French bread
½ cup Christmas Ham (left over)
2 cups mixed salad leaves
Cucumber (peeled into ribbons)
3 eggs
Feta cheese (optional)

Instructions

Thinly slice Christmas ham and set aside.
Soft boil eggs (cook for approximately 4 minutes), peel and cut in 4 wedges, add salt and pepper and set aside.
Slice French bread and pan toast.
Using a small food processor, blend orange juice, orange zest, cilantro, sugar and olive oil.
Add chopped onions, and salt and black pepper to taste.
To assemble: plate salad leaves, cucumber slices, on a large salad plate.
Top with ham and eggs and toasted French bread.
Sprinkle with feta cheese, if desired.
Drizzle with Orange Vinaigrette to serve.
