Ingredients
1 cup chicken or vegetable broth
1 cup quinoa (rinsed and drained)
1 tsp sea salt
6 cups chopped callaloo
1 lb cherry tomatoes (halved)
3/4 cup spicy citrus dressing
1 or 2 jalapenos (stemmed, seeded and chopped)
1/2 cucumber (halved lengthwise and sliced)
1/2 small red onion (very thinly sliced)
1 cup celery
