12 ackees in pods
1 onion or 3 stalks escallion
1 small tomato
1 fl oz oil
2 tbsp curry powder
1/4 cup water
Remove ackee from pods and clean.
Boil them until just tender, then drain.
In the meantime, chop the onion or escallion and the tomato.
Heat the oil and gently fry the onion or escallion, then add the tomato and curry powder and stir well.
Add the water, then the drained ackees, and simmer for 5 minutes.
Season with salt and pepper and serve at once.
