1 lb flour
1 lb brown sugar
1 lb butter
1 tsp baking powder
2 tsp cinnamon
1 tsp salt
4 tsp vanilla
1 tsp rosewater
¼ tsp lime juice
Browning (colour to your liking)
½ tsp almond essence
3 lbs mixed fruits (raisins, currants, cherries, mixedfruits, prunes)
Rum and wine
(Secret ingredient is a little
piece of grated ginger.)
Preheat oven to 350°F.
Cream butter and sugar until light and fluffy.
Mix eggs in one at a time.
Add vanilla, rose water, almond essence, browning, and blended fruits to butter mixture and mix well.
Sift flour, baking powder, salt, mixed spices, cinnamon and add to mixture alternately with wine or rum.
Bake at 350° Fahrenheit for 1½ hrs.
