Jamaican Stew Beef

This stew beef recipe is the ultimate, hearty, melt-in-your-mouth comfort food, and so easy to make. This is a great recipe by Chef Noel Cunningham to use in your slow cooker on a busy day. 1 tbsp canola oil
2.5 lbs boneless beef stew meat (such as chuck) cut into 1-inch cubes
salt and freshly ground black pepper
1 medium onion (freshly chopped)
1 tsp onion powder
1tsp garlic powder
1 tsp smoked paprika powder
3 tbsp tomato paste
1 scotch bonnet pepper (seeded and minced)
2 medium cloves garlic (minced about 2 teaspoons)
1 cup beef stock or water
0.5 tsp pimento
4sprigs fresh thyme
2 stalks scallion
1 tsp soy sauce
2 potato (washed, peeled and diced)
1large carrot (washed, peeled and diced)



Heat oil in a pot over high heat until smoking.
Season with the next seven ingredients.
Mark as complete

Add beef to the pan and cook without moving until well-browned on one side, about 6 minutes.
Stir to loosen the meat. Add tomato paste and stir to combine then add beef stock or water if used and allow to cook for 15-20 minutes then add remaining ingredients and simmer over low flame.
Mark as complete

Stirring constantly and adding water as needed.
Continue cooking until meat is tear-apart-tender when pierced with a fork, about 20 minutes, and serve with rice or pasta.
