1pint prune wine | |
0.5 lb cherries | |

0.5 lb mix peel | |
7 eggs | |
1 tsp baking powder | |
2 tsp mixed spice | |
2 tsp vanilla |
For Icing
2 large egg whites | |
1 tbsp lime juice | |
0.5 cup icing sugar | |
1 tsp glycerine |

Directions for cake
Cream together the butter and sugar well and add the eggs one at a time, beating well in between.

Next, add the rest of the flour, throw in the wine then add the fruits and the cherries.

Last but not least, add the spices, vanilla, baking powder and give it a good mix for 30 minutes. That's about 15 minutes per lb.

Pour the mixture into a lined baking tin and bake at 350 degrees F for 45 minutes, then lower temperature and bake until done.

Directions for Icing
Use an electric mixer on medium speed to whip the egg whites with the icing. Add the lime juice and glycerine.

Mix for about 5-10 minutes until opaque and shiny. It must have a smooth consistency to sit on the cake.
Place the icing in a pastry bag and apply to the cake as desired.
