Christmas Roast Chicken with Sorrel Ginger

1Whole CB Chicken
5 cloves garlic
3 tbsp ginger
4 stalks scallion
0.5large sweet pepper (1/2 of a large)
0.5 cup parsley
0.5 cup pimento
2 Scotch Bonnet Pepper
1 onion
0.5 cup water
1 tbsp Badia Complete Seasoning
1 tbsp Maggie Chicken Seasoning
0.5 tbsp Maggie All Purpose
0.5 tbsp Easi Spice Chicken Seasoning
0.5 tbsp brown sugar
0.75 tbsp mixed spice
1tbsp nutmeg
1tbsp oregano powder
1 tbsp red chilli powder
1tbsp paprika
1 tbsp wet jerk seasoning



Prep Ingredients

Blend all your fresh ingredients together and in a separate dish, mix all your dry dry ingredients and whisk it so they are evenly distributed.
Mark as complete

Season Chicken

Wash your chicken with vinegar and lime, then first add your wet blend, massage it into the chicken then add your dry seasonings, season inside too.

Pre-cook the chicken

Place your chicken in a baking dish and cover with foil paper. Bake at 170 degrees C for 45 mins. Then place on a baking sheet with potatoes and carrots.

Make Sorrel Glaze

Add sorrel, ginger, water, sugar, nutmeg, bbq sauce and garlic to a pot, reduce until thick then strain the liquid to remove the sorrel pods.

Glaze the chicken

Glaze your chicken with the sorrel glaze every 10 minutes while you bake the chicken for another 30 minutes uncovered in the oven at 180 degrees.

Let it rest

Let your chicken rest for a minimum of 30 minutes before carving to ensure that it remains juicy and tender.
Carve to your liking and serve hot.
