Almond drops is a bit new to the Jamaican culture but similar to preparing Coconut drops, its just as tasty. Try this amazing and simple recipe by Deandra Youngsang.

Ingredients

Adjust Servings
2 paks of Sunshine Snacks Fruit and Almond / Roasted Almond mix
1 cup brown sugar
2 tbsp Appleton Rum of your choice add / subtract based on your taste
0.5 tsp vanilla extract
1 tsp grated ginger add / subtract based on your taste
1 cup water
Pinch of Cinnamon Powder
Pinch of Salt
Grease paper / banana leaf

Directions

1.

Add sugar, ginger, salt and water in a pot or sauce pan.
Mark as complete
2.

Add Appleton rum to the mixture and let it boil until the liquid becomes sticky.
Ensure the pan is on medium flame and stir constantly to avoid the mixture sticking to the base of the pan.

Once it becomes a syrup mixture, add the two packs of almond and stir for about 5 mins.
Mark as complete
4.

Turn off when it has completely caramelized.
Mark as complete
5.

With a large spoon, drop the mixture when hot on grease paper or banana leaf (if you want to do the real Jamaican style).
Allow to cook and serve.
Mark as complete

Notes

* Ensure you wash the banana leaf before use.
