Mexican Rice

Ingredients
3 tbps Hi-Lo Vegetable Oil
1 cup uncooked Hi-Lo Long Grain White Rice
4 Hi-Lo Franks Blowout (diced)
1 tsp garlic salt
1/2 tsp ground cumin
1/4 cup chopped onion
1/2 cup tomato paste/sauce
1/2 cup canned diced tomatoes
2 cups chicken broth
1/2 cup Hi-Lo Green Peas
1/2 cup Hi-Lo Sweet Corn

Instructions

  1. Heat oil in a large saucepan over medium heat and add Hi-Lo Long Grain White Rice. Cook, stirring constantly, until puffed and golden. While Hi-Lo Long Grain White Rice is cooking, sprinkle with salt and cumin.
  2. Stir in onion, Hi-Lo Blowout Franks and cook until tender. Stir in tomato paste/sauce and chicken broth. bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
  3. Add Hi-Lo Sweet Corn, Hi-Lo Green Peas, and diced tomatoes. Fluff to incorporate and steam for another 3 minutes.
