Toto is essentially a coconut cake, which is a traditional Jamaican dessert. Its roots go back to the colonial era, when our ancestors often only had coconut molasses and flour to put together a meal. While the basis for this dessert remains the same, there are a few added ingredients today which have helped seal its place as a permanent fixture of Jamaican family events.
1 1/4 lbs baking flour
12 oz brown sugar
1 packet Milk Powder
1 whole dry coconut (grated)
1 oz raisins, soaked (optional)
1 tbsp baking powder
1 tbsp mixed spice
2 large eggs
12 oz water
1 tbsp vanilla
2 oz Margarine (melted)
