This Jamaican Coconut Rum Cake is VERY moist and has a strong rum flavor.
1 1/4 cup all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
4 eggs + 3 egg yolks
1 1/2 cup sugar
3/4 tsp coconut extract
1 cup threaded coconut
3/4 tsp vanilla extract
1 1/2 stick or 3/4 cup butter (melted and cooled)
For Rum Glaze
2 tbsp dark rum
2 tbsp sugar
1/4 cup sweetened coconut cream
For Icing
3 tbsp cream cheese (softened)
3 tbsp sweetened coconut cream
1 tbsp dark rum
1 tsp vanilla
1/2 cup powdered sugar (sifted)
1 tbsp milk (if needed)
1 cup shredded coconut (toasted)
