String beans are Jamaica’s most popular green bean. They are available all year round, its cheap and like all fresh beans, simple to prepare. I know pine nuts are Italian but they sell them in some local supermarkets. This is a staple recipe by JuicyChef thats prepared all the time for group dinners. It isn’t exactly original but like most classics are timeless in their simplicity.
Ingredients
1lb (500g) String beans, steamed for 3 minutes, cooled in ice bath and drained.
2 Garlic Cloves, sliced
Olive Oil
Salt and Pepper
2 tbsp Flat Leaf Parsley, chopped
1 tbsp Dill, chopped
1/2 cup Toasted Pine-nuts
Method:
Over medium heat in a small saucepan, add a couple tablespoons of olive oil and saute the garlic until golden, remove from heat.
Add prepared string beans to a bowl and pour over olive oil and garlic, season with salt and pepper and toss until combined.
Garnish with parsley, dill and toasted pine nuts.
Serve immediately.
