Jamaican fruit cake for the Christmas, anyone? Let’s bake Christmas memories together, with this simple recipe, courtesy of EVE.
Ingredients
1/2 bottle EVE browning
1 lb EVE golden brown cane sugar
1 lb margarine
8 eggs
1 lb baking flour
1 tsp EVE baking powder
1 tsp lime rind (grated)
1 tsp EVE mixed spice
1 tsp EVE cinnamon
3 tsp vanilla
1 tsp each flavouring (pineapple, strawberry, lemon)
1 tsp lime juice
1/2 cup cake wine
1/4 cup white overproof rum
blended fruits (raisins, currants, prunes – 1lb each)
Method
Blend soaked fruits and place in an airtight container
Put sugar and butter in a container and beat until light & fluffy
Add beaten eggs into the mixture
Fold in sifted flour (with nutmeg, cinnamon & lime rind) alternatively with wine and flavouring ending with flour
Add blended fruits to the mixture
Add browning, ensuring it is evenly mixed
Pour batter into greased and lined baking tins. (Consistency is ideal when a wooden spoon placed in the middle to stand slowly falls to the side)
Bake in a pre-heated oven at 280 degrees F for approximately 1 hour or until skewer inserted comes out clean.

how many eggs?
The recipe is in complete it did not say how many eggs
And how much fruits most people tell you what to buy to set your fruits up and when you ready to bake they will tell you a cup of fruits or a lb of fruit recipe was not clear
