Jamaican pumpkin steamed with shrimp and lobster prepared the Rainforest Seafoods way!
1 8oz. Rainforest Seafoods lobster tail (split in half)
4 ea. Rainforest Seafoods jumbo shrimp
1 teaspoon seafood spice
1 clove minced garlic
2 tablespoon butter
1 cup coconut milk
1 small carrot (cut in chunks)
2oz. pumpkin (cut in small chunks)
1 small onion (julienned)
1 stalk scallion (sliced)
2 okra, cut in four
1 small sweet pepper (cut in small chunks)
1 country pepper (cut in half minus seeds)
1 sprig thyme
4 pimento seeds
1 Rainforest Seafoods beenie bammy (cut in half)
Heat sauté pan and add the butter, garlic, coconut milk, pumpkin, seafood spice, carrots, pimento seeds and lobster. Place a lid on and bring flame to medium heat and cook for 5 minutes. Add remaining vegetables, shrimp and bammy, continue to cook for 3 more minutes, turn flame on low allowing it simmer for one minute. Use salt and pepper to enhance taste if necessary.
Remove from pan arrange on plate-ware of choice and serve.
